Then the food products are immediately cooled to stop the food from cooking any longer. Blanching helps preserve the nutrients, color, and texture of the food before the next step in processing. Blanching equipment also helps prevent the risk of food contamination.

Industrial cookers are heated chambers used to perform a variety of applications within the food industry. Industrial cookers heat a large volume of product at extremely high temperatures then remove the product and deliver it to the next step in the process.
